Weeknight Chicken

IMG_0650.JPGWhat do you make when you buy a whole chicken from Whole Foods because it was on sale and it’s sitting in your fridge?

Lemon Chicken with Croutons from ‘Barefoot in Paris’.

The easiest chicken to put together, you simply cut up some onions and lemons and stick it in a large oven-safe pan. Roast it for an hour and voila, you’re ready to eat!

In this case I left out the croutons, but it is just as delicious with them.

Sweet Potato Hash

This recipe is a riff off of Bobby Flay’s Sweet Potato Green Onion Pancakes. My brother and I made this recipe one Saturday morning in January, but without a functioning food processor grater to properly grate the sweet potatoes, my pancakes turned into more of a hash.

To make this into a hash, throw the ingredients that are required for the pancake into a hot pan, preferably a cast iron skillet, and press them down into one layer. Allow them to get a golden crust by sauteeing them for about 5 minutes before you flip the hash in sections to do the same to the other side.

Warning: this makes a lot of hash with just one sweet potato.

This is a great recipe if you’re looking to impress your guests with the blend of flavors you get from the ham, pepper jelly, green onions and the egg yolk.

What’s Happening

It’s been a while since I last posted…work travel can get in the way sometimes…so here is a compilation of what’s happening in my world…

I recently attended the Eataly 10 Year Anniversary Party that allowed me to have excess quantities of wine and cheese. I also learned of the best invention, a wine glass holder that I will now be taking with me everywhere!

Chicken Pot Pie a la Ina Garten – true comfort food if you need something to devour at the end of a long day.

Buddha Bowl – a healthy and easy way to eat your veggies and protein. I’ve had this for 3 meals this week, but never tire of it. I use this sauce recipe and then threw in roasted butternut squash, zucchini, broccoli, and brown rice. I buy Trader Joe’s frozen brown rice in bulk.
